Typically when you do a logo for a company, it goes through different phases of elimination. You usually start off with 25 or so rough options (Yes, that many. I’ve gone as many as 50) and then slowly narrow them down until you’re down to 3 to 5.
I typically present the final version to clients in person or via web conferencing, but on the off chance that I have to mail it to them I send the individual “packets” with each logo option. Each packet would include the logo itself on a white background in its different variations and colors (actual colors and black and white), a writeup of the inspiration, a summary of previous meetings with the client to remind him why he decided to go in this direction, and technical specs such as pantone colors and typefaces used. Of course, everything must be clean, professional looking, and each packet should look like a set somehow.
I’ve worked at firms where they approach logo presentation differently, but that’s how I’m doing it these days.

Typically there are phases involved in logo design call it “from concept to conception”. Each stage will progress with approval from the client.
    1. Ask what they are looking for.
    2. Present them varying options based on #1
    3. The customers narrows it, telling you what they like and don’t like.
    4. Refine the selected design making adjustments based on client preferences.
    5. Client reviews and makes final comments or adjustments.
    6. Create deliverables (ie. all the formats and .ico files of logo)
    7. The client accepts
    8. Thank them and request adding logo to portfolio.
At any stage you can explain the concept behind the design and how it might tie into a slogan or larger marketing concept.
    HTH!
